My baby is constantly constipated and I have been told to increase fruit which I have, but cut out potatoes, rice, dairy. How can I ensure he is getting all his nutritional needs whilst cutting all the main food groups out?

I'm really sorry that your baby is constipated. Offering
diluted fruit juice and ensuring your baby is hydrated by
giving him cooled boiled water can help with constipation.
I'm not sure who recommended that you cut potatoes, rice and
dairy out of your baby's diet. Unless he has allergies to these
foods, it's really not a good idea to cut out major food groups
like this. As you suggest, it's hard to get a balanced diet for
your little one if you are cutting lots of foods. I would advise
that you reintroduce those foods, unless you have been advised by a
healthcare professional to avoid them.
