Pumpkin and beef hotpot

The combination of tender beef and sweet pumpkin will make this puree, created by MadeForMums, a firm favourite with your baby.

Ingredients

  • 1 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 clove of garlic, crushed
  • ¼ tsp fresh thyme, finely chopped
  • 115g lean stewing steak, cut into small cubes
  • 2tsp tomato puree
  • 2 medium-sized potatoes, peeled and cut into small cubes
  • 225g pumpkin, deseeded and cut into chunks
  • 250ml salt-free vegetable stock or water

Try this recipe using other root vegetables, such as parsnip, turnip or sweet potato.

Method

1. Heat the oil in a large pan or flame-proof casserole dish and saute the onions for about five minutes. Add the garlic and thyme and cook for another minute, then add the steak and cook until browned.

2. Add the potatoes and pumpkin and pour over the stock (or water). Bring to the boil, then cover, reduce the heat and leave to simmer for 50-60 minutes, stirring occasionally, until the meat is really tender.

3. Remove from heat, then mash to the required consistency.
