1 Cut the peppers into quarters and remove the seeds.
2 Rub with olive oil and place skin down on a baking tray.
3 Roast for 15 minutes at 190°C.
4 Remove from oven, turn over and grill until skins begin to go black.
5 Place in a bowl, cover with clingfilm and leave to cool before removing skins and slicing into thin strips.
6 Lightly grill the sausages (for around 10 mins) and cut into slices.
7 Cook the pasta according to the packet instructions, drain and set aside.
8 Fry the onion and garlic in a little olive oil until soft, then add the roasted pepper, oregano and tomatoes.
9 Add the sliced unprocessed meat to the sauce, then mix with the pasta in a large pan and heat through.
10 Serve with fresh basil and Parmesan shavings.
