Chicken And Pesto Pasta


  • 1 chicken breast
  • 100g penne pasta
  • 1 tbsp basil pesto
  • Small knob butter
  • 4 mushrooms, finely chopped


  • Steam or poach the chicken breast until cooked through. Shred into small pieces.
  • Meanwhile, cook the pasta according to the instructions on pack, drain and cut into 1cm long pieces.
  • Heat the butter in a small frying pan and fry the mushrooms until soft. Drain on kitchen paper.
  • Mix all ingredients together until they are well coated in the pesto, heat through and serve.
