Crumble With Apple And Apricot


  • 1-3 large cooking apples (depending on the size of your dish)
  • 4-6 fresh apricots, or half a can of tinned apricots
  • 1 tbsp cinnamon
  • 3 tbsp crushed almond
  • 50g brown sugar
  • 50g butter
  • 150g flour


  • Preheat the oven to 220°C.
  • Chop the cooking apples into small chunks, then place in a saucepan, add enough water to cover the apples and bring to the boil.
  • Add the cinnamon and reduce the heat to simmer, stirring occasionally for 5-7 minutes until the apples are soft.
  • Meanwhile, place the butter and flour into a separate bowl and rub together with your hands until they reach a breadcrumb consistency, then stir in the sugar.
  • Chop the apricots into pieces, removing the stones if using fresh fruit.
  • Take the apples off the heat and mix in the apricot pieces, then spoon into a baking dish. 
  • Cover with the crumble mix and sprinkle with ground almonds.
  • Place in the oven for around 30 minutes or until the topping turns a golden brown. 
  • Allow to cool thoroughly before serving.
