Lentil And Coconut Dhal With Naan Bread Fingers


  • 2 tbsp red lentils, pre-soaked according to packet instructions
  • 3 tbsp cold water
  • 1 tomato, finely chopped
  • 1 small carrot, finely chopped
  • Half a small onion, finely chopped
  • 1 tbsp coconut milk
  • 2 tsp plain or basmati rice
  • Sprinkle of ginger and garlic powder
  • 1 naan bread


  • Put the lentils, water, tomato, carrot, onion, coconut milk, garlic and ginger in a small pan and simmer for around 10 minutes, stirring occasionally.
  • Add the rice and cook until tender.
  • Leave to cool and then mash to the required consistency, adding a little more water or coconut milk if it becomes gloopy. 
  • Serve with fingers of plain naan bread, prepared according to packet instructions.
