Pork, Orange and Apricot Stew


  • 1 tsp olive oil
  • 150g lean pork, finely diced
  • 1/2 a small onion
  • 1 carrot
  • 25g no-soak apricots, quartered
  • 1 small clove garlic, crushed
  • 1 tbsp plain flour (or corn flour if gluten intolerant)
  • Zest and juice 1 orange


  • Heat the oil in a medium pan, add the pork and cook over a medium heat, stirring until beginning to brown.
  • Meanwhile, peel and finely chop the onion and carrot. Add to the pork with the apricots and garlic and cook for 2 minutes.
  • Use a kettle to boil 250ml of water.
  • Add the flour to the pork, stir well for 1 min.
  • Add the water and orange zest and juice and bring to the boil, stirring.
  • Cover and cook for 15 minutes or until the pork and vegetables are tender.
  • Cool slightly before serving with couscous.
