Pumpkin and Beef Hotpot


  • 1 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 clove of garlic, crushed
  • ¼ tsp fresh thyme, finely chopped
  • 115g lean stewing steak, cut into small cubes
  • 2tsp tomato puree
  • 2 medium-sized potatoes, peeled and cut into small cubes
  • 225g pumpkin, deseeded and cut into chunks
  • 250ml of water


  • Heat the oil in a large pan or flame-proof casserole dish and saute the onions for about five minutes. 
  • Add the garlic and thyme and cook for another minute, then add the steak and cook for a long time at a lower temperature until browned.
  • Add the potatoes and pumpkin and pour over the water. 
  • Bring to the boil, then cover, reduce the heat and leave to simmer for 50-60 minutes, stirring occasionally, until the meat is really tender.
  • Remove from heat, then mash to the required consistency.
