Roast Pepper And Sausage Pasta


  • 2 large red peppers
  • 2 good quality medium-size pork sausages
  • 8oz pasta
  • 14oz tin of chopped tomatoes
  • Half an onion, chopped
  • 2 cloves garlic
  • 1 tsp oregano
  • Olive oil


  • Cut the peppers into quarters and remove the seeds. 
  • Rub with olive oil and place skin down on a baking tray. 
  • Roast for 15 minutes at 190°C. 
  • Remove from oven, turn over and grill until skins begin to go black. 
  • Place in a bowl, cover with clingfilm and leave to cool before removing skins and slicing into thin strips.
  • Lightly grill the sausages (for around 10 mins) and cut into slices.
  • Cook the pasta according to the packet instructions, drain and set aside.
  • Fry the onion and garlic in a little olive oil until soft, then add the roasted pepper, oregano and tomatoes. 
  • Add the sliced sausage to the sauce, then mix with the pasta in a large pan and heat through. 
  • Serve with fresh basil and Parmesan shavings.
