INGREDIENTS
- 160g pork mince
- 25g onion, finely chopped
- 50g potato
- 250g sweet potato
- 1 small carrot (60g)
- 30ml apple juice
METHOD
1 Place the mince and onion in a non-stick frying pan and cook over a medium heat, stirring until beginning to brown.
2 Mash into small but soft pieces
3 Meanwhile, peel the sweet potato, potato and carrot and cut into 5cm chunks.
4 Add all three to the mince, along with the apple juice and 200ml of water.
5 Cover the pan, steam and simmer for 10 minutes or until everything is tender.
6 Drain off half the liquid.
7 Mash everything else together to make a thick puree with small soft lumps.
8 Serve at room temperature or warm.
