1 Preheat the oven to 220°C.
2 Chop the cooking apples into small chunks, then place in a saucepan, add enough water to cover the apples and bring to the boil.
3 Add the cinnamon and reduce the heat to simmer, stirring occasionally for 5-7 minutes until the apples are soft.
4 Meanwhile, place the butter and flour into a separate bowl and rub together with your hands until they reach a breadcrumb consistency, then stir in the sugar.
5 Chop the apricots into pieces, removing the stones if using fresh fruit.
6 Take the apples off the heat and mix in the apricot pieces, then spoon into a baking dish.
7 Cover with the crumble mix and sprinkle with ground almonds.
8 Place in the oven for around 30 minutes or until the topping turns a golden brown.
9 Allow to cool thoroughly before serving.
