INGREDIENTS
90G red lentils, pre-soaked according to packet instructions
3 tbsp cold water
1 tomato, finely chopped
1 small carrot, finely chopped
Half a small onion, finely chopped
1 tbsp coconut milk
2 tsp plain or basmati rice
Sprinkle of ginger and garlic powder
1 naan bread
METHOD
1 Put the lentils, water, tomato, carrot, onion, coconut milk, garlic and ginger in a small pan and simmer for around 10 minutes, stirring occasionally.
2 Add the rice and cook until tender.
3 Leave to cool and then mash to the required consistency, adding a little more water or coconut milk if it becomes gloopy.
4 Serve with fingers of plain naan bread, prepared according to packet instructions.
